What happens when you uninstall

All of the app's settings are deleted. Reinstalling doesn't restore them.
Checkout validation stops working.
The date picker added to your theme stops appearing. None of the app's code is left in your theme files.
Delivery dates and times already saved in the Additional details of existing orders remain.

Note down your settings (lead times, shipping holidays, non-delivery days, time slots). You'll need them if you reinstall or move to another app.
The code you added to notification templates can stay without causing problems. Remove it if you don't need it.

Remove this app's date picker in the theme editor (delete the Delivery date block from the cart template and save).
Set up the new app. If both apps' date pickers are shown at the same time, they can write to the same attribute names and overwrite each other's values.
If you use an order management or warehouse system, check that the new app saves the same attribute names and value formats as before. If they differ, update the settings on that system.
Uninstall this app.
